Angel question

Okay, so Sam doesn't have a soul which means he doesn't feel any emotions. I am on board with that.
What I am more curious about is the angels. Now, Anna said that angels don't feel emotions and that's why she chose to fall, right? Castiel expressed some basic emotions in his earlier episodes (frustration with Dean, regret about having to obliterate a town etc) and Uriel expressed rage and annoyance (which I took to be because he was rebelling).
But I am puzzled about Gabriel. I mean he quite clearly expresses emotions. Is it because he left Heaven? Is that how it works? The longer an angel is away from Heaven the more emotions they feel?
I'm just trying to get my head around whether Gabriel would understand what Sam was going through with the whole lack of emotions thing.
