I think I'm going to save the vegetable crumble for Sunday when my parents get back. I think there's going to be way too much for just me :)

So, here is the question, what should I have for dinner tomorrow? I fancy cooking something for my solo Halloween party. Something warm and autumnal but that I can cook so there's just enough for me. Any suggestions?

Roast a butternut squash. Use it to make soup and freeze any left over. Have it with delicious seedy rustic bread warmed in the oven. Followed by pumkin muffins (currently available in Tesco and Sainsburys).

Heee - you can use this recipe: http://www.myhouseandgarden.com/recipes/Pumpkin_Soup.htm but slice up a butternut squash (much smaller than a pumpkin and tastier at this time of year). So simple to roast - cut it up into slices with the skin still on, drizzle oil over it and slam in a hot oven for about 30 minutes until soft. When cooked slice off the skin and then saute like in the recipe (just weigh it before hand then you can reduce the quantities of other other ingredients). You can buy ready-made chicken/veggie stock in the supermarkets now and it's really easy to use.

OMg, I'm so hungry now!!!

If you want video instructions there's this one here too: http://www.videojug.com/film/how-to-make-pumpkin-soup which is nice and helpful. I love home-made soup - it's much tastier than bought stuff and freezes really well (plus it's impressive if you serve it to other people!). Definitely butternut squash instead of pumpkin though because pumpkins are a bit 'woody' and not so tasty. Enjoy!
